Kyrgyz Horse Sausage
Chuchuk is a traditional Kyrgyz sausage made from horse meat and fat, seasoned with garlic and spices, and typically stuffed into natural casings. It's a delicacy often prepared for special occasions and celebrations, reflecting the nomadic heritage of Kyrgyzstan.

- 1 kg Horse meat(boneless, cut into small cubes)
- 300 g Horse fat(cut into small cubes)
- 5-7 cloves Garlic(minced)
- 2 tbsp Salt
- 1 tsp Black pepper(freshly ground)
- 1 tsp Cumin seeds(crushed)
- 1 tsp Coriander seeds(crushed)
- as needed Horse or lamb casings(cleaned and prepared)

In a large bowl, combine the cubed horse meat and fat. Add the minced garlic, salt, black pepper, crushed cumin, and coriander seeds. Mix thoroughly to ensure the spices are evenly distributed throughout the meat and fat.

Allow the mixture to marinate for at least 1 hour at room temperature, or preferably overnight in the refrigerator, to allow the flavors to meld.

Prepare the casings by rinsing them thoroughly inside and out. If using dried casings, soak them in warm water according to package instructions until pliable.

Stuff the meat mixture into the prepared casings using a sausage stuffer or by hand. Ensure the casings are filled firmly but not so tight that they might burst during cooking. Tie off the ends of the sausages securely.

Prick the sausages a few times with a needle to allow steam to escape during cooking.

In a large pot, bring enough water to a simmer (do not boil vigorously). Carefully place the sausages into the simmering water. Cover the pot and cook for 2 to 3 hours, or until the sausages are cooked through and firm to the touch. The internal temperature should reach 71ยฐC (160ยฐF).

Remove the sausages from the water and let them cool slightly. Chuchuk is traditionally served sliced and can be enjoyed warm or cold.
