Tiguere Degue
A savory and flavorful millet and peanut stew, often prepared for special occasions. It features tender meat (typically beef or lamb) simmered in a rich sauce with a base of ground peanuts and millet flour, enhanced with aromatic spices and vegetables.

- 1 kg Beef or Lamb(cut into 2-inch cubes)
- 200 g Millet Flour
- 300 g Roasted Peanuts(unsalted, shelled)
- 3 large Onions(chopped)
- 400 g Tomatoes(crushed or pureed)
- 4 cloves Garlic(minced)
- 1 inch piece Ginger(grated)
- 4 tbsp Vegetable Oil
- 1.5 liters Water(approximately)

- 1 tsp Cumin
- 1 tsp Coriander
- 1 small Optional: Chili Pepper(finely chopped, for heat)

In a large pot or Dutch oven, heat the vegetable oil over medium-high heat. Brown the meat on all sides. Remove meat and set aside.

Return the browned meat to the pot. Add enough water to just cover the meat. Bring to a simmer, then reduce heat to low, cover, and cook for 1 hour, or until the meat is tender.

While the meat is simmering, grind the roasted peanuts into a fine powder using a food processor or blender. In a separate bowl, whisk the millet flour with about 1 cup of water to form a smooth paste.

Add the ground peanuts to the simmering stew. Stir well to combine. Gradually whisk in the millet flour paste, ensuring no lumps form. Add more water as needed to reach a thick stew consistency.

If using, add the chopped chili pepper. Continue to simmer, uncovered, for another 20-30 minutes, stirring frequently to prevent sticking, until the stew has thickened and the flavors have melded.
