- 500 g White beans(dried, soaked overnight)
- 2 medium Yellow onions(chopped)
- 3 medium Carrots(grated)
- 1 medium Parsnip or parsley root(grated)
- 2 medium Red bell peppers(grated or finely chopped)
- 3 tablespoons Sunflower oil
- 2 liters Water
- 20-30 ml Borscht (fermented wheat/barley liquid)(optional, for a sour taste)
- 1 tablespoon Fresh thyme leaves
- 1 bunch Fresh parsley(chopped, for garnish)

Drain the soaked beans and wash them. Place the beans in a large pot with fresh water. Bring to a boil, then reduce heat and simmer until tender (about 1 to 1.5 hours).

While the beans are cooking, heat the sunflower oil in a separate pan over medium-low heat. Add the chopped onions and sauté until softened and golden brown, about 10-15 minutes.
