Monaco Lamb Navarin
A hearty and flavorful lamb stew, Navarin à la Monégasque, showcases the region's love for fresh vegetables and tender lamb, often enriched with Mediterranean herbs and a touch of white wine.

- 1.5 kg Lamb shoulder(cut into 2-inch cubes)
- 3 tbsp Olive oil
- 2 large Onions(chopped)
- 4 cloves Garlic(minced)
- 3 medium Carrots(peeled and cut into chunks)
- 2 medium Turnips(peeled and cut into chunks)
- 2 medium Zucchini(cut into thick slices)
- 200 g Green beans(trimmed)
- 400 g Diced tomatoes(canned)
- 200 ml White wine
- 500 ml Lamb or beef stock
- 2 tsp Herbes de Provence
- 2 tbsp Fresh parsley(chopped, for garnish)

Preheat oven to 160°C (320°F). Season the lamb cubes generously with salt and pepper.

Heat olive oil in a large, oven-safe pot or Dutch oven over medium-high heat. Brown the lamb cubes in batches until golden brown on all sides. Remove lamb and set aside.

Add chopped onions to the pot and sauté until softened, about 5-7 minutes. Add minced garlic and cook for another minute until fragrant.

Stir in the carrots and turnips, and cook for 5 minutes. Pour in the white wine and scrape the bottom of the pot to deglaze, letting it simmer for 2 minutes.

Return the lamb to the pot. Add the diced tomatoes, lamb or beef stock, and Herbes de Provence. Stir to combine.

Bring the stew to a simmer, then cover the pot tightly and transfer to the preheated oven. Cook for 1 hour and 30 minutes.

Add the zucchini and green beans to the pot. Stir gently, cover, and return to the oven for another 1 hour, or until the lamb is very tender and the vegetables are cooked through.

Season with salt and pepper to taste. Garnish with fresh chopped parsley before serving.
