Bolonjska Pogača

- 250 ml Warm water
- 7 g Active dry yeast
- 1 tsp Sugar
- 1 tsp Salt
- 50 ml Olive oil
- 300 g Feta cheese(crumbled)
- 150 g Kajmak or sour cream
- 2 large Eggs
- 50 g Fresh parsley(chopped)
- 20 g Fresh dill(chopped)
- 0.5 tsp Black pepper(freshly ground)
- 1 for brushing Egg yolk

Activate yeast in warm water with sugar for 5-10 minutes until foamy.

In a large bowl, combine flour and salt. Make a well in the center.

Pour the yeast mixture and olive oil into the well. Mix to form a soft dough.

Knead the dough on a floured surface for 8-10 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for 1 hour, or until doubled in size.

While the dough rises, prepare the filling: In a bowl, combine crumbled feta, kajmak (or sour cream), eggs, chopped parsley, dill, and black pepper. Mix well.

Punch down the risen dough and divide it into two portions, one slightly larger than the other.

Roll out the larger portion of dough to fit the bottom of a greased baking dish (approx. 9x13 inch).
