Frango com Molho de Amendoim e Quiabo
A rich and savory chicken stew featuring tender chicken pieces simmered in a creamy peanut sauce with the unique texture of okra. This dish embodies the heartiness of Mozambican home cooking, often served with a side of rice or xima.

๐ง Ingredients
- 1.5 kg Chicken thighs(bone-in, skin-on, cut into serving pieces)
- 3 tbsp Vegetable oil
- 2 large Onions(diced)
- 6 cloves Garlic cloves(minced)
- 400 g Tomatoes(diced)
- 200 g Smooth peanut butter
- 600 ml Chicken broth
- 300 g Okra(fresh or frozen, trimmed and sliced)
- 2 tbsp Lime juice
- 1 tsp Salt(or to taste)
- 0.5 tsp Black pepper(freshly ground, or to taste)
- 0.5 tsp Chili flakes(optional, for heat)
๐จโ๐ณ Instructions
- 1
Pat the chicken pieces dry with paper towels. Season generously with salt and pepper.
- 2
Heat the vegetable oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat. Brown the chicken pieces on all sides until golden brown. Remove the chicken from the pot and set aside.
- 3
Add the diced onions to the same pot and cook until softened and translucent, about 5-7 minutes. Add the minced garlic and chili flakes (if using) and cook for another minute until fragrant.
- 4
Stir in the diced tomatoes and cook for about 5 minutes, allowing them to break down slightly.
- 5
In a separate bowl, whisk together the peanut butter and chicken broth until smooth. Pour this mixture into the pot with the tomatoes and onions.
- 6
Return the browned chicken pieces to the pot. Bring the sauce to a simmer, then reduce the heat to low, cover, and cook for 45 minutes, stirring occasionally.
- 7
Add the sliced okra to the pot. Stir gently, cover, and continue to cook for another 20-25 minutes, or until the chicken is cooked through and tender, and the okra is tender.
- 8
Stir in the fresh lime juice. Taste and adjust seasoning with salt and pepper as needed.
- 9
Serve hot, traditionally with xima or rice.
๐ก Pro Tips
- โFor a smoother sauce, you can blend the peanut butter and broth mixture before adding it to the pot.
- โIf using frozen okra, you may not need to cook it as long.
- โAdjust the amount of chili flakes to your preferred level of spice.
