Omani Fried Eggs
A simple yet flavorful Omani breakfast dish featuring eggs fried with onions, tomatoes, and a blend of aromatic spices. It's often served with Omani bread.

- 4 large Eggs
- 1 medium Onion(finely chopped)
- 2 medium Tomatoes(chopped)
- 2 cloves Garlic(minced)
- 2 tbsp Olive oil
- 1/2 tsp Turmeric powder
- 1/2 tsp Cumin powder
- 1/2 tsp Coriander powder
- to taste Salt
- to taste Black pepper
- 2 tbsp Fresh cilantro(chopped, for garnish)

Heat olive oil in a non-stick skillet over medium heat. Add chopped onion and cook until softened and translucent, about 5 minutes.

Add minced garlic and cook for another minute until fragrant.

Stir in chopped tomatoes, turmeric, cumin, coriander, salt, and pepper. Cook until tomatoes soften and the mixture is well combined, about 5-7 minutes.

Make wells in the tomato and onion mixture and crack the eggs directly into them. Cover the skillet and cook until the egg whites are set and the yolks are cooked to your desired doneness, about 5-7 minutes.
