🧂 Ingredients
- 600 g Mackerel fillets
- 400 g Tomatoes(sliced)
- 2 medium Onions(thinly sliced)
- 4 cloves Garlic(thinly sliced)
- 100 ml White wine
- 3 tbsp Olive oil
- 1 piece Bay leaf
- 2 tbsp Fresh parsley(chopped)
- 1 tsp Salt
- 0.5 tsp Black pepper

Preheat oven to 180°C (350°F).

Arrange the sliced onions and garlic in the bottom of a baking dish.

Place the mackerel fillets on top of the onions and garlic. Season with salt and pepper.

Layer the sliced tomatoes over the fish. Add the bay leaf.

Pour the white wine and olive oil over the ingredients in the baking dish.

Cover the dish with aluminum foil and bake for 20 minutes.

Remove the foil and bake for another 10 minutes, or until the fish is cooked through and the tomatoes are softened.
