- 2 medium Large onions(chopped)
- 5 cloves Garlic cloves(minced)
- 2 cans (400g each) Diced tomatoes
- 120 ml Dry white wine

- 700 g Large black olives(pitted and soaked for at least 10 minutes)
- to taste Salt
- for garnish Fresh parsley(chopped)
👨🍳 Instructions
- 1
Cut the chicken into bite-sized pieces. Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Fry the chicken for 5-6 minutes until golden brown on all sides. Remove the chicken from the pan and set aside.
- 2
Reduce the heat to medium-low. Add the chopped onions to the same pan and cook, covered, for about 10 minutes until softened and translucent. Add the minced garlic and cook for another minute until fragrant.
- 3
Add the diced tomatoes, white wine, and bay leaves to the pan. Stir to combine and bring to a simmer. Cook for about 30 minutes, allowing the sauce to thicken slightly.
- 4
Return the chicken to the pan. Add the soaked and drained olives. Stir everything together and cook for another 5 minutes, allowing the flavors to meld.
- 5
Season with salt to taste, if needed (olives can be salty). Remove the bay leaves. Garnish with fresh chopped parsley before serving.
💡 Pro Tips
- ✓Soaking the olives helps to reduce their saltiness, making them more palatable in the stew.
- ✓If you don't have white wine, you can substitute with chicken broth and a splash of lemon juice.
- ✓This dish is excellent served with mămăligă (polenta) or crusty bread to soak up the delicious sauce.
