Chicken with Sour Cream and Dill
A comforting Romanian dish featuring tender chicken pieces simmered in a rich, creamy sauce made with sour cream, flavored with fresh dill. It's often served with mămăligă (polenta) or mashed potatoes.

🧂 Ingredients
- 800 g Chicken thighs or breasts(cut into bite-sized pieces)
- 2 tbsp Butter
- 2 tbsp All-purpose flour
- 1 cup Sour cream
- 1/2 cup Chicken broth or water(more if needed)
- 3 tbsp Fresh dill(chopped)
- to taste Salt
- to taste Black pepper
👨🍳 Instructions
- 1
Season the chicken pieces with salt and pepper. Melt the butter in a large skillet or pot over medium-high heat. Brown the chicken pieces on all sides. Remove the chicken from the skillet and set aside.
- 2
Add the flour to the skillet and whisk it into the melted butter to form a roux. Cook for 1-2 minutes, stirring constantly, until lightly golden.
- 3
Gradually whisk in the chicken broth (or water) until smooth. Bring the mixture to a simmer, stirring until it begins to thicken.
- 4
Reduce the heat to low. Stir in the sour cream and chopped dill until well combined. Be careful not to boil the sauce after adding the sour cream, as it can curdle.
- 5
Return the browned chicken to the skillet with the sauce. Stir to coat the chicken evenly. Cover and simmer gently for 20-25 minutes, or until the chicken is cooked through and tender.
- 6
Taste and adjust seasoning with salt and pepper. Serve hot with your favorite side dish.
💡 Pro Tips
- ✓For a richer sauce, use heavy cream instead of sour cream, or a mix of both.
- ✓If the sauce becomes too thick, add a little more chicken broth or water to reach your desired consistency.
- ✓Ensure the heat is low when adding sour cream to prevent it from separating.
