Mutsindish Matoke with Beef
A hearty and flavorful dish combining tender beef with mashed plantains (matoke) in a rich, savory sauce, often seasoned with traditional Rwandan spices.

- 1 kg Beef stew meat(cubed)
- 6 large Green plantains(peeled and chopped)
- 2 medium Onions(chopped)
- 4 medium Tomatoes(chopped)
- 4 cloves Garlic(minced)
- 1 inch piece Ginger(grated)
- 3 tbsp Vegetable oil
- 500 ml Beef broth
- 1 tsp Coriander powder
- 1 tsp Cumin powder
- 0.5 tsp Turmeric powder

In a large pot or Dutch oven, heat vegetable oil over medium-high heat. Brown the beef cubes on all sides. Remove beef and set aside.

Add chopped onions to the pot and sautรฉ until softened, about 5-7 minutes.

Add minced garlic and grated ginger, sautรฉ for another minute until fragrant.

Stir in chopped tomatoes, coriander powder, cumin powder, and turmeric powder. Cook for 5 minutes, stirring occasionally, until tomatoes break down.

Return the browned beef to the pot. Pour in the beef broth, season with salt and pepper. Bring to a boil, then reduce heat, cover, and simmer for 1 hour, or until beef is tender.

Add the chopped plantains to the pot. Ensure they are submerged in the liquid. Cover and continue to simmer for another 20-25 minutes, or until plantains are very soft and have started to break down, thickening the sauce.

Stir gently to mash some of the plantains into the sauce, creating a thicker consistency. Adjust seasoning if needed.
