Jeddah Style Lamb Mutabbaq

- 250 ml Warm water(approximately)
- 1 tsp Salt
- 50 ml Vegetable oil(for dough and frying)
- 400 g Minced lamb
- 2 medium Onions(finely chopped)
- 1 medium Tomatoes(finely chopped)
- 1/4 cup Parsley(chopped)
- 1 tsp Ground cumin
- 1 tsp Ground coriander
- 1/2 tsp Black pepper

- 2 large Eggs(beaten, for filling and brushing)

For the dough: In a large bowl, combine flour and salt. Gradually add warm water, mixing until a soft, pliable dough forms. Knead for 5-7 minutes until smooth. Cover and let it rest for at least 30 minutes.

For the filling: In a bowl, combine minced lamb, chopped onions, chopped tomatoes, chopped parsley, cumin, coriander, black pepper, and salt. Mix well. Stir in one beaten egg to bind the filling.

Divide the dough into 4 equal portions. On a lightly floured surface, roll out each portion very thinly into a large circle (about 10-12 inches in diameter). Brush the surface lightly with oil.

Spoon half of the lamb filling onto one half of each dough circle, leaving a border. Fold the other half of the dough over the filling to create a semi-circle. Pinch the edges firmly to seal.

Heat a lightly oiled non-stick skillet or griddle over medium heat. Carefully place one mutabbaq onto the hot surface. Cook for about 5-7 minutes per side, or until golden brown and crispy, and the filling is cooked through.

Repeat with the remaining mutabbaqs. Brush the cooked mutabbaqs with a little beaten egg for a glossy finish, if desired.
