- 1 kg Whole chicken(cut into pieces)
- 4 large Ripe plantains
- 3 large Onions(2 chopped, 1 sliced)
- 4 medium Tomatoes(chopped)
- 2 large Carrots(peeled and roughly chopped)
- 2 large Bell peppers(1 red, 1 green, deseeded and sliced)
- 4 cloves Garlic(minced)
- 1 tablespoon Ginger(grated)
- 3 tablespoons Tomato paste
- 4 tablespoons Vegetable oil
- 250 ml Chicken broth
- 1 Bay leaf
- 1 teaspoon Thyme
- 1 teaspoon Curry powder
- to taste Salt
- to taste Black pepper
- 2 Optional: Chili peppers(finely chopped)

Season the chicken pieces with salt, pepper, thyme, and curry powder. Let marinate for at least 15 minutes.

Heat 2 tablespoons of vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the chicken pieces on all sides. Remove chicken and set aside.

Peel and slice the ripe plantains. Fry them in the same pot until golden brown. Remove and set aside.

Add the remaining 2 tablespoons of oil to the pot. Add the chopped onions, garlic, and ginger. Sautรฉ until softened.
