Nyama Yakagochwa
Grilled Meat
Nyama Yakagochwa, often referred to as 'braai' or barbecue in Zimbabwe, is a celebration of grilled meats. It typically features various cuts of beef, goat, or chicken, marinated and grilled over an open flame to achieve a smoky, succulent flavor. This dish is a cornerstone of social gatherings and festivities.

๐ง Ingredients
- 1.5 kg Beef (e.g., T-bone, sirloin, or ribs)(cut into steaks or chunks)
- 0.5 kg Goat meat (optional)(cut into chunks)
- 0.5 kg Chicken (e.g., thighs or drumsticks)(cut into pieces)
- 2 large Onion(finely chopped)
- 4 cloves Garlic(minced)
- 3 medium Tomatoes(pureed or finely chopped)
- 4 tbsp Vegetable oil
- 2 tsp Salt(or to taste)
- 1 tsp Black pepper(freshly ground)
- 1 tsp Chili powder(or to taste)
- 1 tsp Curry powder
- 2 tbsp Worcestershire sauce
- 2 tbsp Lemon juice
๐จโ๐ณ Instructions
- 1
Prepare the marinade: In a bowl, combine chopped onions, minced garlic, tomato puree, vegetable oil, salt, black pepper, chili powder, curry powder, Worcestershire sauce, and lemon juice.
- 2
Marinate the meat: Place the beef, goat meat (if using), and chicken pieces in the marinade. Ensure all pieces are well coated. Cover and refrigerate for at least 2 hours, or preferably overnight for deeper flavor.
- 3
Prepare the grill: Preheat your grill to medium-high heat. If using charcoal, wait until the coals are covered with white ash. Clean and oil the grill grates to prevent sticking.
- 4
Grill the meat: Place the marinated meat onto the hot grill. Grill for approximately 15-20 minutes per side for steaks, and 25-35 minutes for chicken pieces and goat chunks, turning occasionally, until cooked through and nicely charred. Cooking time will vary depending on the thickness of the meat and the heat of the grill.
- 5
Rest the meat: Once cooked, remove the meat from the grill and let it rest for 5-10 minutes before serving. This allows the juices to redistribute, ensuring a more tender and flavorful result.
- 6
Serve: Nyama Yakagochwa is traditionally served with sadza, a fresh salad, or a spicy relish.
