Afghan Lamb and Okra Stew

A comforting and flavorful stew featuring tender lamb and okra simmered in a rich tomato-based sauce with aromatic spices. This dish is a staple in Afghan households, often served with rice.

- 1 kg Lamb shoulder(cut into 2-inch pieces)
- 500 g Okra(trimmed and halved lengthwise if large)
- 2 large Onions(chopped)
- 400 g Tomatoes(crushed or diced)
- 4 cloves Garlic(minced)
- 1 inch piece Ginger(grated)
- 3 tbsp Vegetable oil
- 1 tsp Turmeric powder
- 1 tsp Coriander powder
- 1 tsp Cumin powder
- to taste Salt
- to taste Black pepper
- 2-3 cups Water or lamb broth
- 1/4 cup Fresh cilantro(chopped, for garnish)

Heat oil in a large pot or Dutch oven over medium-high heat. Brown the lamb pieces on all sides. Remove lamb and set aside.

Add chopped onions to the pot and sautรฉ until softened and lightly browned, about 8-10 minutes.

Add minced garlic and grated ginger, and cook for another minute until fragrant.

Stir in turmeric, coriander, and cumin powders. Cook for 30 seconds, stirring constantly.

Return the lamb to the pot. Add crushed tomatoes, salt, and pepper. Pour in enough water or broth to almost cover the lamb.

Bring to a boil, then reduce heat to low, cover, and simmer for at least 1 hour, or until the lamb is tender.

Add the prepared okra to the pot. Stir gently, cover, and continue to simmer for another 20-30 minutes, or until the okra is tender and the sauce has thickened.

Taste and adjust seasoning if necessary. Garnish with fresh cilantro before serving.
