Chicken with Tomatoes and Potatoes in a Casserole
A hearty and flavorful Albanian casserole featuring tender pieces of chicken baked with potatoes, tomatoes, onions, and a blend of aromatic herbs. This one-pot meal is a popular choice for a satisfying family dinner.

🧂 Ingredients
- 600 g Chicken thighs(bone-in, skin-on, cut into pieces)
- 500 g Potatoes(peeled and cut into 2cm cubes)
- 2 medium Onions(sliced)
- 4 cloves Garlic(sliced)
- 400 g Tomatoes(chopped, or 1 can (400g) crushed tomatoes)
- 3 tbsp Olive oil
- 150 ml Water or chicken broth
- 1 tsp Dried oregano
- 0.5 tsp Dried thyme
- 1 tsp Salt
- 0.5 tsp Black pepper
- 2 tbsp Fresh parsley(chopped, for garnish)

Preheat oven to 200°C (400°F).

In a large bowl, toss the chicken pieces with half of the olive oil, salt, and pepper. Set aside.

In the same bowl, toss the cubed potatoes, sliced onions, and sliced garlic with the remaining olive oil, oregano, thyme, salt, and pepper.

Arrange the seasoned potatoes, onions, and garlic in an even layer in a large baking dish or casserole. Place the seasoned chicken pieces on top of the vegetables.

Scatter the chopped tomatoes (or pour crushed tomatoes) over the chicken and vegetables. Pour the water or chicken broth into the dish.

Cover the baking dish tightly with aluminum foil. Bake for 40 minutes.

Remove the foil and continue baking for another 20 minutes, or until the chicken is cooked through, the skin is golden brown, and the potatoes are tender.
