Chicken with Peanut Sauce
A rich and savory chicken dish simmered in a creamy peanut sauce, infused with aromatic spices and vegetables. This dish is a comforting staple in Ivorian cuisine, often served with rice or attiéké.

🧂 Ingredients
- 1.5 kg Chicken pieces(bone-in, skin-on (thighs and drumsticks recommended))
- 1 cup Peanut butter(natural, unsweetened)
- 2 large Onions(1 chopped, 1 sliced)
- 4 cloves Garlic(minced)
- 1 tablespoon Ginger(freshly grated)
- 400 g Tomatoes(canned crushed or 3-4 fresh, blended)
- 2 tablespoons Tomato paste
- 2 cups Chicken broth
- 1 small Scotch bonnet pepper(finely chopped (optional, adjust to taste))
- 3 tablespoons Vegetable oil
- 1 teaspoon Curry powder
- 1 teaspoon Thyme(dried)
- Salt(to taste)
- Black pepper(to taste)
- 1/4 cup Cilantro(chopped, for garnish)

Season the chicken pieces generously with salt and black pepper.

Heat vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the chicken pieces on all sides. Do this in batches to avoid overcrowding. Remove chicken and set aside.

Add the chopped onion to the same pot and sauté until softened, about 5-7 minutes. Add minced garlic and grated ginger, sauté for another minute until fragrant.

Stir in the tomato paste and cook for 1-2 minutes. Add the crushed tomatoes, chicken broth, curry powder, and dried thyme. Bring to a simmer.

Return the browned chicken pieces to the pot. Add the sliced scotch bonnet pepper, if using. Stir in the peanut butter until well combined and the sauce is smooth. If the sauce is too thick, add a little more chicken broth or water.

Cover the pot, reduce heat to low, and simmer for 45-60 minutes, or until the chicken is cooked through and tender, and the sauce has thickened. Stir occasionally.
