Nauru Pandanus Chicken Curry

- 600 g Chicken thighs(boneless, skinless, cut into bite-sized pieces)
- 2 tbsp Pandanus fruit extract(or pandanus paste)
- 400 ml Coconut milk(full-fat)
- 1 medium Onion(finely chopped)
- 3 cloves Garlic(minced)
- 1 inch Ginger(grated)
- 2 tsp Curry powder
- 1 tsp Turmeric powder
- 1 tsp Cumin powder
- 1 tsp Coriander powder
- 0.5 tsp Chili flakes(or to taste)
- 2 tbsp Vegetable oil

Heat vegetable oil in a large pot or Dutch oven over medium heat. Add the chopped onion and sautรฉ until softened, about 5-7 minutes.

Add the minced garlic and grated ginger to the pot and cook for another minute until fragrant.

Stir in the curry powder, turmeric powder, cumin powder, coriander powder, and chili flakes. Cook for 1-2 minutes, stirring constantly, until the spices are fragrant.

Add the chicken pieces to the pot and brown them on all sides, about 5-7 minutes.

Pour in the coconut milk and the pandanus fruit extract. Stir well to combine, scraping up any browned bits from the bottom of the pot.
