Friese Kruidkoek met Appel en Rozijnen
A fragrant and moist Frisian-style spiced cake, enriched with the sweetness of apples and the chewiness of raisins. This cake is a delightful variation on traditional Dutch kruidkoek, perfect for an afternoon treat with coffee or tea.

๐ง Ingredients
- 250 g All-purpose flour
- 150 g Brown sugar
- 125 g Butter(softened)
- 2 large Eggs
- 100 ml Milk
- 1 tsp Baking powder
- 1 tsp Ground cinnamon
- 1 tsp Ground ginger
- 0.5 tsp Ground nutmeg
- 0.25 tsp Ground cloves
- 75 g Raisins
- 1 medium Apple(peeled, cored, and diced)
- 2 tbsp Honey(for glazing (optional))
๐จโ๐ณ Instructions
- 1
Preheat your oven to 170ยฐC (340ยฐF). Grease and flour a loaf pan (approximately 23x13 cm or 9x5 inches).
- 2
In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
- 3
Beat in the eggs one at a time, mixing well after each addition.
- 4
In a separate bowl, whisk together the flour, baking powder, cinnamon, ginger, nutmeg, and cloves.
- 5
Add half of the dry ingredients to the wet ingredients and mix. Then, add the milk and mix until just combined. Finally, add the remaining dry ingredients and mix until no dry streaks remain. Be careful not to overmix.
- 6
Gently fold in the diced apple and raisins.
- 7
Pour the batter into the prepared loaf pan and spread evenly.
- 8
Bake for 60-75 minutes, or until a skewer inserted into the center comes out clean. If the top starts to brown too quickly, you can loosely cover it with aluminum foil.
- 9
Once baked, let the cake cool in the pan for about 10-15 minutes before inverting it onto a wire rack to cool completely.
- 10
Optional: While the cake is still warm, brush the top with honey for a glossy finish.
๐ก Pro Tips
- โEnsure your butter and eggs are at room temperature for easier mixing.
- โDon't overmix the batter after adding the flour, as this can result in a tough cake.
- โFor a richer flavor, you can soak the raisins in warm water or a bit of rum for about 15 minutes before adding them to the batter.
