Arroz con Chorizo Tableño
A flavorful Panamanian rice dish featuring the distinct taste of chorizo tableño, a type of sausage from the Azuero Peninsula, combined with rice, vegetables, and aromatic spices.

🧂 Ingredients
- 250 g Chorizo Tableño(casings removed, crumbled)
- 2 cups Arborio rice
- 1 medium Yellow onion(finely chopped)
- 1 medium Red bell pepper(finely chopped)
- 3 cloves Garlic(minced)
- 4 cups Chicken broth
- 1 packet Sazón con azafrán
- 1/4 cup Culantro(chopped)
- 2 tbsp Vegetable oil
- to taste Salt
- to taste Black pepper
👨🍳 Instructions
- 1
Heat vegetable oil in a large pot or Dutch oven over medium heat. Add the crumbled chorizo tableño and cook until browned and slightly crispy, about 5-7 minutes. Remove the chorizo with a slotted spoon and set aside, leaving the rendered fat in the pot.
- 2
Add the chopped yellow onion and red bell pepper to the pot. Sauté until softened, about 5 minutes.
- 3
Stir in the minced garlic and cook for 1 minute until fragrant.
- 4
Add the Arborio rice to the pot and stir to coat the grains with the chorizo fat and vegetables. Cook for 2 minutes, stirring constantly, until the edges of the rice appear slightly translucent.
- 5
Pour in the chicken broth and add the sazón con azafrán packet. Stir to combine. Bring the mixture to a boil.
- 6
Reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the rice is tender and most of the liquid has been absorbed. Stir occasionally to prevent sticking.
- 7
Stir in the cooked chorizo tableño and chopped culantro. Season with salt and black pepper to taste.
- 8
Let the rice rest, covered, for 5 minutes before serving.
💡 Pro Tips
- ✓Chorizo tableño can be found in Latin American specialty stores. If unavailable, a good quality, slightly spicy pork sausage can be substituted.
- ✓Ensure you use Arborio rice for its creamy texture, or a similar short-grain rice.
- ✓Don't overcook the rice; it should be tender but still have a slight bite.
