Chicken Marrow Stew
A rich and flavorful stew where chicken is simmered with bone marrow, creating a deeply savory and tender dish. It's often prepared with aromatic spices and vegetables, served typically with rice or fufu.

- 1.5 kg Chicken pieces(bone-in, such as thighs and drumsticks)
- 500 g Beef or chicken marrow bones(cut into manageable pieces)
- 2 large Onions(1 chopped, 1 sliced)
- 6 cloves Garlic cloves(minced)
- 1 thumb-sized piece Ginger(grated)
- 400 g Tomatoes(canned, crushed)
- 2 tbsp Tomato paste
- 1 large Red bell pepper(seeded and chopped)
- 1 optional Scotch bonnet pepper(or to taste, for heat)
- 4 cups Chicken broth
- 3 tbsp Palm oil
- 1 tsp All-purpose seasoning
- to taste Salt
- to taste Black pepper
- for garnish Fresh parsley

In a large pot or Dutch oven, heat the palm oil over medium-high heat. Add the chopped onion, garlic, and ginger. Sautรฉ until softened and fragrant, about 5 minutes.

Add the chicken pieces and brown them on all sides. This may need to be done in batches to avoid overcrowding the pot.

Stir in the tomato paste, crushed tomatoes, chopped red bell pepper, and scotch bonnet pepper (if using). Cook for about 5-7 minutes, stirring occasionally, until the mixture darkens slightly.

Add the marrow bones to the pot. Pour in the chicken broth and bring to a boil. Season with all-purpose seasoning, salt, and black pepper.

Reduce the heat to low, cover the pot, and let the stew simmer for at least 1 hour, or until the chicken is very tender and the marrow has rendered into the sauce. Stir occasionally, adding more broth or water if the stew becomes too thick.

Once the chicken is tender and the marrow has infused the sauce, remove the marrow bones if desired (or leave them in for a richer flavor). Taste and adjust seasoning if necessary.
