A rich and flavorful lamb dish cooked in a karahi (wok) with a blend of aromatic spices, tomatoes, and herbs. It's known for its tender lamb and deeply savory sauce.

๐ง Ingredients
- 1 kg Lamb(cut into small, bite-sized pieces)
- 2 tbsp Ghee or Butter
- 6 tbsp Vegetable Oil
- 2 medium Onions(finely sliced)
- 500 g Tomatoes(fresh, chopped)
- 1 tbsp Garlic(freshly minced)
- 1 tbsp Ginger(freshly grated)
- 3 medium Green Chilies(finely sliced (adjust to taste))
- 1 tbsp Ground Coriander
- 1 tbsp Ground Cumin
- 0.5 tsp Turmeric Powder
- 1 tsp Crushed Black Pepper
- 1 tsp Salt(or to taste)
- 2 tbsp Lemon or Lime Juice
- 0.25 cup Fresh Coriander(chopped, for garnish)
๐จโ๐ณ Instructions
- 1
Heat ghee/butter and vegetable oil in a karahi or heavy-bottomed pan over medium-high heat.
๐ก Tip: Using a karahi (wok) is traditional and helps with even cooking. - 2
Add the lamb pieces and salt. Sear the lamb until browned on all sides. This will take about 5-7 minutes.
- 3
Add the sliced onions, minced garlic, grated ginger, and sliced green chilies. Sautรฉ until the onions are softened and translucent, about 5-7 minutes.
- 4
Stir in the chopped tomatoes, ground coriander, ground cumin, turmeric, crushed black pepper, and salt. Cook until the tomatoes break down and form a thick sauce, about 10-15 minutes.
- 5
Add about 1/2 cup of water, cover the karahi, and reduce the heat to low. Simmer for 25-30 minutes, or until the lamb is tender.
- 6
Uncover, increase the heat slightly, and cook for another 5 minutes, allowing the sauce to thicken.
- 7
Stir in the lemon/lime juice. Taste and adjust seasoning if necessary.
๐ก Tip: The acidity from the lemon/lime juice brightens the flavors. - 8
Garnish generously with fresh chopped coriander and serve hot with naan or chapati.
๐ก Tip: Serve immediately for the best texture and flavor.
๐ก Pro Tips
- โFor a spicier dish, add more green chilies or a pinch of red chili flakes.
- โEnsure the lamb is tender before serving; adjust simmering time if needed.
- โThis dish is best enjoyed with flatbreads like naan or chapati, as it is not typically served with rice.
