Töltött Szűzpecsenye Rozmaringgal és Fokhagymával
A succulent pork tenderloin stuffed with a fragrant mixture of rosemary, garlic, and breadcrumbs, then roasted to perfection. This elegant dish showcases the versatility of pork in Hungarian cuisine, offering a flavorful and satisfying meal.

🧂 Ingredients
- 1 kg Pork tenderloin(trimmed of silver skin)
- 2 tablespoons Fresh rosemary(finely chopped)
- 4 cloves Garlic(minced)
- 100 g Breadcrumbs(plain or panko)
- 50 g Parmesan cheese(grated)
- 2 tablespoons Olive oil
- 1 teaspoon Salt
- 1/2 teaspoon Black pepper
- 1 tablespoon Butter(for searing)
👨🍳 Instructions
- 1
Preheat your oven to 200°C (400°F).
- 2
Butterfly the pork tenderloin: Make a lengthwise cut about two-thirds of the way through the tenderloin, then open it like a book. Make another cut on the opened side to flatten it further into an even thickness.
- 3
In a small bowl, combine the chopped rosemary, minced garlic, breadcrumbs, grated Parmesan cheese, 1 tablespoon of olive oil, salt, and pepper. Mix well to create the stuffing.
- 4
Spread the stuffing mixture evenly over the flattened pork tenderloin, leaving a small border around the edges.
- 5
Carefully roll up the pork tenderloin tightly, starting from one of the long sides, to enclose the stuffing. Secure the roll with kitchen twine at intervals to hold its shape.
- 6
In an oven-safe skillet, heat the remaining 1 tablespoon of olive oil and the butter over medium-high heat. Sear the pork roll on all sides until golden brown.
- 7
Transfer the skillet to the preheated oven. Roast for 35-40 minutes, or until the internal temperature reaches 63°C (145°F) for medium-rare, or 71°C (160°F) for medium.
- 8
Remove the pork from the oven and let it rest for 10 minutes before slicing. This allows the juices to redistribute, ensuring a moist and tender result.
- 9
Remove the twine and slice the tenderloin into thick rounds. Serve immediately.
💡 Pro Tips
- ✓Use a meat thermometer to ensure the pork is cooked to your desired doneness.
- ✓If you don't have kitchen twine, you can use toothpicks to secure the rolled tenderloin.
- ✓For extra flavor, you can add a splash of white wine to the pan after searing the pork and let it reduce before placing it in the oven.
