Latvian Meatballs in Dill Sauce

- 1 medium Onion(finely chopped)
- 2 cloves Garlic cloves(minced)
- 1 large Egg
- 50 g Breadcrumbs
- 1 tsp Salt
- 0.5 tsp Black pepper
- 2 tbsp Butter(for frying meatballs)
- 2 tbsp Butter(for sauce)
- 2 tbsp All-purpose flour
- 1.5 cups Milk
- 0.25 cup Fresh dill(chopped)
- 0.5 cup Sour cream

In a large bowl, combine ground pork, ground beef, finely chopped onion, minced garlic, egg, breadcrumbs, salt, and pepper. Mix thoroughly until well combined.

Form the mixture into small, uniform meatballs (about 1.5 inches in diameter).

Heat 2 tbsp of butter in a large skillet over medium-high heat. Brown the meatballs on all sides, working in batches if necessary. Remove meatballs from the skillet and set aside.

In the same skillet, melt the remaining 2 tbsp of butter over medium heat. Whisk in the all-purpose flour and cook for 1-2 minutes, stirring constantly, to form a roux.

Gradually whisk in the milk until the sauce is smooth. Bring to a simmer and cook, stirring, until thickened.

Stir in the sour cream and chopped fresh dill. Season with salt and pepper to taste.

Return the browned meatballs to the skillet with the dill sauce. Simmer gently for 10-15 minutes, or until the meatballs are cooked through and the sauce has thickened further.
