- 4 bone-in, skin-on Chicken thighs
- 2 tbsp Olive oil
- 1 medium, thinly sliced Onion
- 3 cloves, minced Garlic
- 1 zested and juiced Lemon
- 0.5 cup, pitted Kalamata olives
- 0.5 cup Dry white wine
- 1 cup Chicken broth
- 1 sprig Fresh rosemary
- 1 sprig Fresh thyme

Pat the chicken thighs dry with paper towels and season generously with salt and pepper.

Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Sear the chicken thighs, skin-side down, until golden brown, about 5-7 minutes. Flip and sear the other side for 2-3 minutes. Remove chicken from the pot and set aside.

Add the sliced onion to the pot and cook until softened and translucent, about 5-7 minutes. Add the minced garlic and cook for another minute until fragrant.

Pour in the white wine and scrape up any browned bits from the bottom of the pot. Let it simmer for 2 minutes.
